The health benefits of cocoa or cacao were well known to the ancient Mayans and Aztecs as far back as 2000 years ago. They prepared a drink called "xocoatl” with beans from the "cacao" tree. Aztec Indians believed that cacao seeds which gave wisdom and power to those who consumed them were a gift of the gods. This belief was vindicated by the medicinal properties of the cacao.   The Ingredients
Couverture contains a high percentage of pure cocoa butter and no added fats or additives. Even the emulsifier is a natural product. As a couverture ,Cocoacraft contains only pure cocoa butter and no added fats. It contains no additives and all the ingredients are sourced directly as natural products. The emulsifier is also a natural product with no side effects.

In the compound that is generally available in the market ,cocoa butter is substituted with hydrogenated fats. This reduces the health benefits of cocoa and increases cholesterol levels. There are two processes for flavor development in Cocoa. The first, more commonly used and less expensive method is Alkalizing or dutching. The second method is called Conching. In conching the liquid chocolate is agitated for a period that maybe as long as seven days. The longer the conching time the better the chocolate.
